RECIPE WRITING

For many years, recipes have been handed down through generations, so that the great cooking of beloved family members can be preserved and shared throughout time. We come to anticipate certain dishes on holidays and others on special occasions through the year based, on these recipes. In addition, we find new and tasty recipes every day online, at a friend's, in a magazine and in cookbooks. Perhaps the most exciting recipe, however, is the one that is recently invented. One who cooks up a new dish that has not been tried creates a recipe never before seen. The recipe can be written down and then entered into the record books of recipes and someday a hundred years from now, that same dish may be a family favorite somewhere. For the recipe to withstand this type of future and scrutiny, it is important that the recipe is written in clear concise fashion and that its elements are all very clear.

When one writes a recipe, there are three very important components involved. One must be sure to include the ingredients, the preparation, and the number of people that it will serve. The ingredients are a very important part of writing a recipe. Often times we will find a recipe we want to try, in a magazine or a book and when we put it together it does not work. When the problem is researched it is discovered that one or more ingredients was left out of the recipe, or the quantities were mistyped which caused the final dish to fail. To avoid this from happening when one writes a recipe, one must list all ingredients that are needed to prepare the dish, including things such as oil for the pan . Once all of the ingredients are listed it is important to double check and be sure that the correct measuring quantities are used. This prevents things like too much or two little of an ingredient being used, which can ruin the final product. It is not necessary but is helpful when writing a recipe if one places the ingredients on the recipe in the order that they will be used. For instance, all of the dry mixing ingredients can be written together and the entire wet ones next. This allows for simplification and a better understanding of the process.

After the ingredients are decided upon and listed, the next step is to discuss the preparation. This is where one places any pre-preparation instructions as well, such as preheating the oven to a certain temperature. Placing this instruction at the beginning of the preparations allows for time to be saved because the oven or stove can preheat as the cook puts the dish together. Once the pre-preparation is discussed the writer of the recipe gives step-by-step instructions as to how to put the dish together. This can include what to mix together, how to mix it and for how long to do so. It also includes what type of dish the preparation should use and then how long it should be cooked.

The final area of the recipe allows for discussion of any added things that can be done to dress it up or make it different. It is also a good area to include altitude difference directions if applicable and serving suggestions.

Once all of this is completed the recipe is recorded and can be used far into the future with confidence.

Mr Martinez, could you share two recipe-inventing memories with us? Perhaps one from the beginning of your career and a more recent one.

The first recipe and the last recipe amount to the same thing: you always try to create a new dish that people want to eat. I don't make the dishes that I created 8 years ago anymore and I suspect that what I make today I shall no longer be making in 8 years time!

New recipes result from a new style of cooking, new textures or new flavours and associations.

And the first recipe you created that was a big surprise to you?
