Ethnic Restaurant Eleftria Greek Taverna Restaurant Concept The Eleftria Greek Taverna is a restaurant designed for upscale professional families where both husband and wife work, yet both still want to have fully cooked, ethnic dinners that are of high quality with excellent nutritional value. The concept is that of both sit-down informal Taverna where the dress code is flip-flops and shorts or even business wear. The food serve will be both counter ordering and a more formal area to sit down and have a nice dinner with family.

This will be differentiated by a partition in the restaurant. Hours of operation will be oriented towards the business lunch and dinner customer segments, opening at 10 am and closing at 11 pm Monday -- Friday and open 11:30am to 12 am Saturday and Sunday. Target Market - Upscale dual-income couples making a combined income of $100,000 a year or more and high income executives and their families who are fans of ethnic. Healthy foods.

Within this general segment, those that have jobs that take them on business trips often (sales, marketing, customer service) will be the primary audience as these professions often have a perennial time shortage. Primary market is dual income couples with children as they are the most time-starved of all. The menu at Daphne's is also not varied enough to capture a greater percentage of the core target market of dual income couples as it focused on smaller, high proceed portions (Friedland, 2002).
