Industry's anticipated culinary forecast reveals menu trends 2012. The National Restaurant Association's annual survey 1,800 professional chefs -- members American Culinary Federation -- reveals hottest trends restaurant menus 2012. Restaurants menus are nowadays changing to suit the current emerging trends in the market. A way that these trends are noted is by the use of an annual chef's survey. This survey conducted late last year by the National Restaurant Association survey of American Culinary Federation member chefs, featured the following; locally sourced ingredients, healthy kid's meals and ethnic cuisines and flavors among others. The survey also had an insight of the hottest technology trends in the catering industry such technologies include the use of smartphone applications and tablet computers.

Ethnic cuisines and flavors being out main are of forecast, showed the following significant trends this year (2012). People are nowadays more captured by the idea of experimenting with other ethnic cuisines different from their own; this has a strong influence on the cooking trends in restaurants to meet the growing appetite...

The growth in ethnic cuisines and flavors trends has been seen to gain popularity among consumers by 6-7% yearly. People is slowly changing the quality of food they are consuming to ethnic cuisines, which most of, them have been found to be healthier, for instance, chili, garlic, grains and legumes are gaining more popularity among the finest ethnic cuisines and flavors since they are seen to be more healthy. The search to incorporate more ethnic cuisines and flavors in everyone's diet has also been on the rise among the flavors and seasoning companies, with more ethnic rich flavors being unveiled.
The trends in ethnic cuisines and flavors included ethnic fusion cuisine being ranked top of the list in that category, followed by the Peruvian cuisine and the regional ethnic cuisine. Others were ranked as they descend in this order, they included; Cuban cuisine, southeast Asian cuisine (example include Thai, Malaysian and Vietnamese among others), Maghreb cuisine, Korean cuisine, Latin American, Mediterranean cuisine, middle eastern cuisine, Low-country cuisine (Georgia coast / south Carolina), southern cuisine…
