I enjoyed reading about the product process matrix from your discussion post. I agree with nearly all of the elements within your post. Namely I agree with you using the continuous process method to ensure that operations can occur without the business itself being interrupted. For a very popular seafood station, it is critical that the process is not interrupted to allow for timely service and effective customer service. I once worked at an IHOP near a very popular party segment of town. After the clubs closed, the IHOP would be extremely busy as it was the only option available at the time. This is similar to your seafood buffet example as the business would need to use the continue process method to mitigate over customer disruption.
