These are fiber from the leafy greens on the hamburger, fats from the hamburger and French fries, proteins from the hamburger, and carbohydrates in many forms — which make up the bulk of the meal. They start off in a common area, but they end up going through different processes to either leave or remain in the body.

The first part of the journey is shared by all nutrient types. The man bites off a chunk of burger or fries, or drinks a swallow of root beer, and this material is processed first in the mouth. The teeth tear and chew the food into small enough portions to be sent onward. After exiting the mouth, all of the food travels down the esophagus via peristaltic action to the stomach. Here, the different types of nutrients part ways.

Fiber: The Simplest Passage

Fiber is probably the least complex of all the nutrient processes because most of it passes, without interference, through the digestive tract with little to no absorption. The fiber enters the stomach, which does little to break it down other than to further reduce the size of the mass. It then travels through the small intestine and the colon, and is excreted as solid waste (Robinson, 2011). Fiber also plays a secondary role during excretion: it binds to other food materials and aids the ease with which they pass through the remainder of the tract.

Protein Digestion and Amino Acid Absorption

In terms of complexity, proteins come next after fiber. Protein must be broken down before it can be absorbed, but this cannot happen during the chewing process (Andrews, 2011). When protein enters the stomach, it arrives in small chunks that must be unraveled so they can be transported through cell membranes and utilized by the body. Specialized stomach cells secrete acid that unravels the protein from a large strand of molecules into smaller, individual strands (Andrews, 2011).

This process, known as denaturation, occurs as stomach contractions, enzymes, and acid work together to break down the protein into manageable pieces. When the protein enters the small intestine, the pancreas and gallbladder add protease compounds that further break the molecules down into amino acids. The cells lining the small intestine also contribute proteases (Andrews, 2011). The amino acids are absorbed by the intestinal cell walls as individual dipeptides and tripeptides, and are then separated further into individual amino acids. These amino acids are either used by the intestinal cells to create needed proteins within the body or are sent to the liver for the same function. The proteins are ultimately broken down by muscle fibers for energy.
