I used "carrot fiber" as my search term to find fiber related articles that talked about carrots and fiber. I also used "fiber +disease" to find articles relevant to how fiber helps fight off disease. I found numerous articles, and most were relevant to this assignment, while some were not relevant at all.

In "Crunch time," the author talks about how vegetables like carrots, that contain a lot of fiber are good for the dieter, because they help you feel full longer, and they help slow digestion, too. They help keep you healthy, and they can help fight diseases like obesity if you rely on them as a steady part of your diet. In "High Fiber Cereals," the author states that research has not been conclusive on fiber helping fight diseases like colon cancer, but it is well documented that it helps fight heart disease, diabetes, can help in stroke prevention, and maintaining blood pressure. She also writes that most Americans don't get enough fiber in their diets. She says, "Most Americans get only about 15 grams of dietary fiber a day -- not even close to the recommended 25 and 38 grams for women and men, respectively, up to age 50" (Broihier, 2009). While fiber requirements go down a bit after 50, they still remain close to these numbers, and most people don't get enough fiber to keep them healthy.

In "Eat well, eat cheap," the author explores many foods that contain fiber, like broccoli, oats, and sweet potatoes, and talks about how these fiber-dense foods help fight diseases like high cholesterol, cancer, and more. She says the ingredients in beans can help fight breast cancer. She writes, "They're extremely high in fiber and in lignans, a type of phytoestrogen that protects against breast cancer in postmenopausal women and reduces the risk of other cancers as well" (Turner, 2009). All of these articles show the many benefits of fiber, and how carrots make a great, fiber-filled snack. Fiber helps prevent diseases, and it's vital to our bodies.
